Lemongrass Iced Tea

INGREDIENTS

Produce
  • 4 Lemon, slices
  • 1/4 cup Lemon grass
  • 2 tsp Tea
Baking & Spices
  • 1/4 cup Sugar
Frozen
  • 8 Ice cubes
Brewing: The first and the foremost step in making a lemon iced tea is brewing the decoction.
  • Boil water in a saucepan. Add sugar (if using) and stir to dissolve it. Turn off the heat.
  • Add the tea leaves or the tea bags. Cover the pan with a lid. Allow the tea to steep for a minute or as per your taste preference.
  • Remove the tea bags and filter the brewed tea. Allow the liquid to cool down.

Flavoring: Once the brewed tea is ready, you can flavor it with lemon juice.

Serving: Lemon Iced Tea tastes best when served on ice cubes with lemon wedges and fresh mint leaves.

Sulaimani tea

INGREDIENTS

  • Water – 2 and 1/2 cups
  • Tea Leaves – 1/2 tsp
  • Cloves – 2
  • Cinnamon – 1/2 inch
  • Cardamom – 1
  • Ginger – 1/2 tsp grated
  • Lemon juice – 2 tsp
  • Mint leaves – 6
  • Sugar / jaggery – 2 tsp

Instructions

  • Boil water in a pan. Once it comes to boil, reduce the flame and add tea leaves.
  • Stir and keep boiling. Crush Cloves, cinnamon and cardamom using mortar and pestle.
  • Add the crushed spices to the boiling tea along with grated ginger.
  • Stir well and add jaggery or sugar. Boil the tea for 2-3 minutes.
  • Remove from flame and strain the tea.
  • Add lemon juice and mint leaves. Stir and Serve hot.

Persian Love Tea | Saffron Tea

INGREDIENTS

  • Saffron
  • Rosebuds
  • Honey
  • Mint
  • Persian Rock Sugar
  • Persian Borage flowers

Method

Using good saffron, take 10 long saffron threads per 4 cups of boiling water. Add 4 or 5 rosebuds per 4 cups. Allow to infuse for 5 minutes, strain and enjoy. It can be sweetened with honey, sugar or Persian rock sugar.

Masala Chai- (Spiced Tea)

INGREDIENTS
  • 250 ml water
  • 2 tsp tea leaf
  • 1 inch piece of ginger root
  • 125 ml milk
  • 4 tsp granulated sugar
  • 4-5 cloves
  • ½ tsp dry ginger powder
  • ¼th tsp black peppercorn
  • 4 green cardamom
  • ½ inch piece of cinnamon stick
INSTRUCTIONS
  1. Grate the ginger root with a grater
  2. In a mortar and pestle put all dry spices. Green cardamom, cinnamon, peppercorns, cloves.
  3. Crush these spices into powder Reserve outer shell of cardamom pods.
  4. In a pan, put water and allow it to boil
  5. As water begins to simmer, put tea leaf and outer shell of cardamom pods.  Let it simmer for couple of minutes.
  6. As tea begins to boil, add grounded spices. Let it simmer for couple of minute.
  7. Now add dry ginger powder and sugar. Keep stirring and let sugar dissolve.
  8. After 3 minutes of stirring, add milk.
  9. Reduce the flame to medium heat.
  10. As tea begins to boil, reduce the flame to lowest. Now add grated ginger and stir it in.
  11. Cover the pan with a lid and let the tea simmer for 4-5 minutes.
  12. After 5 minutes, turn off the flame. Keep tea covered for a minute before serving
  13. Masala chai is best accompanied with glucose biscuits

Hibiscus Tea

INGREDIENTS

  • 1 cup (250 ml) of fresh hibiscus flower petals (or 4 tablespoons of dried hibiscus flower)
  • 4 cups of water (equals to about 1 liter)

Optional ingredients:

  • 1-2 tablespoons of lemon or lime juice
  • 2 tablespoons of honey

How to make it:

  1. Trim the fresh hibiscus flowers by removing the green part (calyx) at the base of the flower. Then remove the seed pods in middle and rinse the flower petals with water. You can also use the calyxes or dry them for later use. If you are using dried hibiscus, you can skip this step.
  2. Pour the water into a pot and add the fresh or dried hibiscus flowers. Bring to boil, turn off the heat, and cover with a lid. Let it steep for about 15 minutes.
  3. Remove the cover and add lemon or lime juice, and honey, if you wish to do so. Mix with a spoon.
  4. Pour into glasses or teacups through a strainer and enjoy!

Chai Latte

INGREDIENTS

HOW TO MAKE CHAI LATTE FROM SCRATCH

1. MAKE CHAI CONCENTRATE

Crush or chop star anise, cloves, and cardamom pods into smaller pieces so that the flavors can be infused better.

In a saucepan, add all ingredients for chai concentrate except the vanilla extract. The vanilla extract will get added later.

Use filtered water if you can since it’ll make your tea taste better.

On low heat, let the tea and spices simmer. Stir occasionally.

This can be made ahead of time and into multiple batches to heat up for chai lattes throughout the week.

Tea Sommelier’s Tip: Since there are so many spices and flavors combined together, you don’t need to use the highest quality black tea. Feel free to use tea sachets or tea bags instead of loose tea.

Strain out tea and spice solids using a mesh strainer.

Add vanilla extract. The chai concentrate is now done!

2. HEAT MILK

Bring milk to simmer on the stovetop. When you see little bubbles form along the edges, take it off the heat. Keep an eye on it to make sure it doesn’t boil.

3. MAKE WHIPPED CREAM

There are a few ways to make whipped cream and the easiest I’ve found is using a handheld milk frother to whisk the heavy cream and sugar together. Use a tall container so that you don’t make a mess.

I like to make the cream with soft peaks and not too stiff so it lays on top of the chai latte better, spreading out on top

4. ASSEMBLE DRINK

This recipe makes 4 servings so divide each part (chai concentrate, milk, whipped cream) into 4 cups.

Start by pouring half a cup of the chai concentrate into a mug.

Add the hot milk, leaving room on top for the whipped cream.

Spoon on the whipped cream.

Turmeric Tea for immunity

To make 

Add 1/2 tsp of turmeric powder along with a pinch of fresh pepper to 2 cups of water in a saucepan. You can also add 2 small piece of dry ginger for added benefits and simmer on low for 3-4 mins. Strain the tea and sip on it warm.

Basil Tea for anxiety

To make 

Add 5-6 basil leaves to 2 cups of water in a saucepan and simmer on low for 3-4 mins. Strain the leaves and sip on it warm.

Ginger Tea for headache

To make

Add 2 small dry ginger pieces to 2 cups of water in a saucepan. Strain the tea and squeeze half a lemon for added benefits, sip on it warm.
